- In a mixing bowl, combine hoisin sauce, oyster sauce, soy sauce, honey, vinegar, sriracha, minced garlic, and sugar. Stir until smooth and set aside.
- Heat vegetable oil in a wok or large skillet over medium-high heat. Add chopped onion and ginger, cooking for about 2 minutes until fragrant.
- Add minced garlic and sauté for another 30 seconds.
- Add ground chicken, breaking it apart with a spatula. Cook for 5–7 minutes until browned and cooked through.
- Pour the prepared sauce over the cooked chicken and stir to coat. Simmer for 5–7 minutes until sauce thickens.
- Remove from heat, stir in toasted sesame seeds and chopped spring onions. Adjust spice with red pepper flakes if desired.
- Spoon the filling into lettuce leaves and serve immediately.
