- Heat a large skillet over medium heat. Add olive oil and butter, letting them melt and combine for about 1-2 minutes.
- Introduce thinly sliced onions, salt, and pepper. Stir gently, cooking for around 20 minutes until golden brown.
- Once caramelized, sprinkle in sugar and mix well. Allow to cook for an additional 5 minutes.
- Pour balsamic vinegar and add thyme. Stir and cook for about 5 minutes.
- Preheat your oven to 400°F (200°C). Roll out puff pastry and cut into rectangles (approximately 4x6 inches).
- Spread the caramelized onion mixture within the pastry borders, sprinkle crumbled goat cheese on top, and add additional thyme.
- Bake on a parchment-lined baking sheet for about 15-20 minutes, until the pastry is golden brown.
