  • 1 teaspoon Thyme use fresh if possible
For the Pastry
  • 1 sheet Puff Pastry store-bought is recommended
For the Topping
  • 4 ounces Goat Cheese can substitute with feta

Method
 

Step-by-Step Instructions
  1. Heat a large skillet over medium heat. Add olive oil and butter, letting them melt and combine for about 1-2 minutes.
  2. Introduce thinly sliced onions, salt, and pepper. Stir gently, cooking for around 20 minutes until golden brown.
  3. Once caramelized, sprinkle in sugar and mix well. Allow to cook for an additional 5 minutes.
  4. Pour balsamic vinegar and add thyme. Stir and cook for about 5 minutes.
  5. Preheat your oven to 400°F (200°C). Roll out puff pastry and cut into rectangles (approximately 4x6 inches).
  6. Spread the caramelized onion mixture within the pastry borders, sprinkle crumbled goat cheese on top, and add additional thyme.
  7. Bake on a parchment-lined baking sheet for about 15-20 minutes, until the pastry is golden brown.
