Ingredients
  

For the Biscuits
  • 2 cups All-Purpose Flour
  • 1 tblsp Baking Powder
  • 1 tsp Salt
  • 1/2 cup Cold Unsalted Butter cut into cubes
  • 3/4 cup Buttermilk or milk and vinegar
For the Chorizo Gravy
  • 8 oz Chorizo Sausage fresh Mexican chorizo preferred
  • 1/4 cup Flour for thickening
  • 2 cups Whole Milk
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Salt to taste
  • 1 tsp Black Pepper to taste
  • 2 tblsp Fresh Parsley for garnish

Method
 

Biscuit Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine all-purpose flour, baking powder, and salt.
  3. Cut in cold unsalted butter until the mixture resembles coarse crumbs.
  4. Create a well in the center and pour in the buttermilk. Stir until just combined.
  5. Turn the dough onto a floured surface, knead gently for about 30 seconds and shape into a rectangle.
  6. Cut out biscuits and place them on a parchment-lined baking sheet.
  7. Bake for 12–15 minutes until golden brown.
Gravy Preparation
  1. While the biscuits bake, heat a skillet and add crumbled chorizo sausage.
  2. Cook for about 5–7 minutes until browned.
  3. Sprinkle flour over the chorizo, stir and cook for 1–2 minutes.
  4. Gradually whisk in whole milk, simmering for about 5 minutes until thickened.
  5. Season with garlic powder, onion powder, salt, and pepper. Stir well.
  6. To serve, halve the biscuits and ladle the chorizo gravy over them. Garnish with parsley.
