Biscuit Preparation
- Preheat your oven to 425°F (220°C).
- In a large mixing bowl, combine all-purpose flour, baking powder, and salt.
- Cut in cold unsalted butter until the mixture resembles coarse crumbs.
- Create a well in the center and pour in the buttermilk. Stir until just combined.
- Turn the dough onto a floured surface, knead gently for about 30 seconds and shape into a rectangle.
- Cut out biscuits and place them on a parchment-lined baking sheet.
- Bake for 12–15 minutes until golden brown.
Gravy Preparation
- While the biscuits bake, heat a skillet and add crumbled chorizo sausage.
- Cook for about 5–7 minutes until browned.
- Sprinkle flour over the chorizo, stir and cook for 1–2 minutes.
- Gradually whisk in whole milk, simmering for about 5 minutes until thickened.
- Season with garlic powder, onion powder, salt, and pepper. Stir well.
- To serve, halve the biscuits and ladle the chorizo gravy over them. Garnish with parsley.
