- Begin by pouring chicken broth into a medium pot and bringing it to a rolling boil over high heat. Once boiling, add the long-grain white rice, then reduce the heat to low, cover, and let it simmer for 15 minutes.
- While the rice is cooking, heat a large skillet over medium heat and add a splash of vegetable oil. Add the ground beef and ground chicken, breaking it apart with a spatula. Cook for about 5-7 minutes, stirring until fully browned.
- Stir in finely chopped onion, diced green bell pepper, and diced celery into the skillet with the browned meat. Cook for 3-4 minutes, stirring occasionally, until the vegetables soften.
- Mix in tomato paste along with Cajun seasoning, black pepper, and cayenne. Stir until the mixture is evenly coated with the spices and simmer for an additional 2-3 minutes.
