Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine the cream of mushroom soup, onion soup mix, and water, stirring until smooth.
  3. Drizzle olive oil in a baking dish and season the chicken thighs well with salt and pepper.
  4. Place the seasoned chicken thighs into the baking dish skin-side up and pour the prepared soup mixture over the chicken.
  5. Cover the dish tightly with aluminum foil and bake in the preheated oven for 1 hour.
  6. After 1 hour, uncover the chicken and continue baking for an additional 30 minutes until the skin is golden brown.
  7. Check that the internal temperature has reached 165°F (75°C) and let the chicken rest for 5 minutes.
  8. Sprinkle the freshly chopped parsley on top before serving.
