  • 1 lb Ground Turkey can be swapped with ground chicken, beef, or pork
  • 2 medium Zucchini sliced into half-moons
  • 2 tbsp Olive Oil or avocado oil
  • 1 medium Onion finely chopped
  • 2 cloves Garlic minced
  • 1 tsp Dried Oregano or Italian seasoning
  • 0.5 tsp Salt to taste
  • 1 tsp Black Pepper to taste
  • 0.25 tsp Crushed Red Pepper Flakes optional
  • 1 cup Chicken Broth or vegetable broth
  • 0.5 cup Grated Parmesan Cheese or nutritional yeast for dairy-free

  • 1 cup Bell Peppers any variety
  • 2 cups Spinach

Method
 

Step‑by‑Step Instructions
  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat until shimmering.
  2. Add 1 finely chopped onion to the skillet and sauté for 3-4 minutes until it becomes soft and translucent.
  3. Stir in 2 minced garlic cloves, cooking for about 30 seconds until fragrant.
  4. Crumble 1 pound of ground turkey into the skillet and cook for 6-8 minutes until browned.
  5. While the turkey is cooking, slice 2 medium zucchinis and add them to the skillet once the turkey is browned.
  6. Sprinkle in 1 teaspoon of dried oregano, 0.5 teaspoon of salt, black pepper to taste, and a pinch of crushed red pepper flakes.
  7. Pour in 1 cup of chicken broth and reduce the heat to low, letting it simmer for about 3-4 minutes.
  8. Stir in 0.5 cup of grated Parmesan cheese until melted.
  9. Taste and adjust seasoning if necessary.
  10. Serve immediately while warm, garnished with extra Parmesan if desired.
