Ingredients
  

For the Turkey Mixture
  • 1 pound Ground Turkey Substitute with ground chicken or beef if desired
  • 1 packet Taco Seasoning Make your own blend for control over spices
  • 1 tablespoon Olive Oil Feel free to use any neutral oil
  • 1 can Diced Tomatoes Drain before adding
  • 1 can Black Beans Rinse and drain
  • 1 cup Corn Kernels Use fresh, canned, or frozen
For the Bowl Assembly
  • 1 cup Rice or Quinoa Or substitute with cauliflower rice
  • 1 whole Avocado Drizzle with lime juice to prevent browning
  • 1/4 cup Chopped Cilantro Optional, can substitute with parsley
  • 1 whole Lime For squeezing over the bowls
Optional Toppings
  • 1 cup Shredded Cheese Choose your favorite variety
  • 1/2 cup Sour Cream Greek yogurt is a healthier substitute
  • 1/4 cup Jalapeños Fresh or pickled for added heat
  • to taste Hot Sauce Use according to heat preference

Method
 

Cooking the Turkey Mixture
  1. Heat the olive oil in a large skillet over medium heat for about 2 minutes.
  2. Add ground turkey to the skillet, breaking it up with a spatula. Cook for 5 to 7 minutes until browned.
  3. Sprinkle taco seasoning over the turkey and stir well. Add a splash of water if needed. Cook for another 2 minutes.
  4. Stir in the diced tomatoes, black beans, and corn. Cook for 3 to 4 minutes until heated through.
  5. Season the mixture with salt and pepper to taste. Simmer for another minute.
Assembling the Bowls
  1. Place about 1 cup of cooked rice or quinoa in each bowl.
  2. Top with the turkey mixture prepared earlier.
  3. Slice avocado and add on top, then sprinkle with chopped cilantro.
  4. Serve with lime wedges and optional toppings for customization.
