  • 2 tablespoons tomato paste
  • 1 cup tomato sauce
  • 1 tablespoon Worcestershire sauce can substitute with tamari for gluten-free
  • 1 tablespoon brown sugar or maple syrup
  • 1 tablespoon apple cider vinegar

Step-by-Step Instructions
  1. In a large skillet, heat olive oil over medium heat. Add onion, carrots, and celery. Sauté for about 8-10 minutes until softened.
  2. Stir in bell pepper and garlic. Cook for an additional 2-3 minutes until soft.
  3. Add smoked paprika, chili powder, and cumin. Cook for about 1 minute until fragrant.
  4. Mix in the tomato paste, cooking for an additional 2-3 minutes until caramelized slightly.
  5. Pour in vegetable broth, scraping the bottom. Stir in lentils, tomato sauce, Worcestershire sauce, and brown sugar.
  6. Bring mixture to a boil, then reduce heat and cover. Simmer for 40-50 minutes, stirring occasionally.
  7. Stir in apple cider vinegar and season to taste. Allow to rest off the heat for 5 minutes before serving.
