Preparation Steps
  1. Preheat the oven to 425°F (220°C). Cut the potatoes into fry shapes, toss with olive oil and sea salt, and bake on a single layer for 25–30 minutes, flipping halfway until golden brown.
  2. In a heatproof bowl, whisk together egg yolks and lemon juice. Over simmering water, drizzle in clarified butter whisking continuously for about 5–7 minutes until thick and creamy.
  3. Bring a pot of water to a gentle simmer, add vinegar. Crack eggs into small bowls and slide them into the water one at a time, poach for 3–4 minutes until whites are firm.
  4. On a plate, layer crispy fries, top with poached eggs, and generously drizzle hollandaise sauce over everything.
  5. Add optional toppings like shredded cheese, bacon, or sautéed vegetables to customize your dish.
