- In a large skillet, heat olive oil over medium heat. Add onion, bell pepper, and celery. Sauté for about 5 minutes.
- Add minced garlic and sliced sausage to the skillet. Cook for 4-5 minutes until sausage is browned.
- Stir in rinsed rice, chicken broth, Cajun seasoning, and smoked paprika. Mix well.
- Bring to a boil, then cover and reduce heat. Simmer for 15 minutes until rice is tender.
- Fold in thawed shrimp 5 minutes before cooking time is up. Cover and cook until shrimp are pink.
