  • 1 medium Onion chopped
  • 1 medium Bell Pepper diced, any variety
  • 1 stalk Celery chopped, optional
  • 3 cloves Garlic minced
For the Protein
  • 1 pound Sliced Sausage smoked sausage or andouille
  • 1 pound Shrimp thawed
For the Rice
  • 1 cup Rinsed Rice or quinoa/cauliflower rice
  • 2 cups Chicken Broth or vegetable broth
For the Seasoning
  • 1 tablespoon Cajun Seasoning or a mix of spices
  • 1 teaspoon Smoked Paprika or regular paprika
For Garnishing
  • 2 tablespoons Green Onions sliced

Method
 

Step-by-Step Instructions
  1. In a large skillet, heat olive oil over medium heat. Add onion, bell pepper, and celery. Sauté for about 5 minutes.
  2. Add minced garlic and sliced sausage to the skillet. Cook for 4-5 minutes until sausage is browned.
  3. Stir in rinsed rice, chicken broth, Cajun seasoning, and smoked paprika. Mix well.
  4. Bring to a boil, then cover and reduce heat. Simmer for 15 minutes until rice is tender.
  5. Fold in thawed shrimp 5 minutes before cooking time is up. Cover and cook until shrimp are pink.
  6. Taste and adjust seasoning with salt, pepper, and garnish with green onions before serving.
