- Dice the chicken breasts into bite-sized pieces. Combine chicken with olive oil, lime juice, chili powder, onion powder, garlic powder, smoked paprika, salt, and chipotle pepper. Toss and let marinate for 15 minutes.
- Prepare the rice according to package directions.
- Heat a skillet and add olive oil. Add marinated chicken and cook for 12-15 minutes until golden brown and cooked through.
- Sauté red bell pepper, red onion, and jalapeño in the same skillet until tender, about 6-8 minutes.
- Warm tortillas and layer with rice, chicken mixture, corn, black beans, and Cotija cheese. Drizzle with sauce and roll tightly.
- Cut wraps in half and serve immediately, optionally with more sauce and cilantro on top.
