Ingredients
  

For the Chicken
  • 1 pound boneless skinless chicken breasts
  • 2 tablespoons lime juice lemon juice can be used
  • 1 teaspoon chili powder adjust for spice level
  • 1 teaspoon onion powder fresh onions can be substituted
  • 1 teaspoon garlic powder or use fresh minced garlic
  • 1 teaspoon smoked paprika regular paprika can substitute
  • 1 teaspoon salt adjust to taste
  • 1 tablespoon olive oil or any cooking oil
  • 1 chipotle pepper in adobo sauce omit for milder flavor
For the Wrap
  • 4 large tortillas whole grain is a health boost
  • 1 cup rice brown rice is an option
  • 1 medium red bell pepper any bell pepper can substitute
  • 1 medium jalapeño remove seeds for less heat
  • 1 medium red onion sweet onion can replace
  • 1 cup corn kernels canned or frozen works
  • 1 can black beans other beans can be used
  • 3/4 cup Cotija cheese feta cheese is an alternative
For the Sauce
  • 1 cup sour cream Greek yogurt can be used
  • 1 tablespoon honey maple syrup is an alternative
  • 2 tablespoons fresh cilantro omit if not a fan
  • water use as needed for consistency

Method
 

Cooking Steps
  1. Dice the chicken breasts into bite-sized pieces. Combine chicken with olive oil, lime juice, chili powder, onion powder, garlic powder, smoked paprika, salt, and chipotle pepper. Toss and let marinate for 15 minutes.
  2. Prepare the rice according to package directions.
  3. Heat a skillet and add olive oil. Add marinated chicken and cook for 12-15 minutes until golden brown and cooked through.
  4. Sauté red bell pepper, red onion, and jalapeño in the same skillet until tender, about 6-8 minutes.
  5. Warm tortillas and layer with rice, chicken mixture, corn, black beans, and Cotija cheese. Drizzle with sauce and roll tightly.
  6. Cut wraps in half and serve immediately, optionally with more sauce and cilantro on top.
