- In a large bowl, combine the ground turkey, breadcrumbs, green onions, cilantro, garlic, ginger, soy sauce, lime juice, sesame oil, salt, and pepper. Mix gently until just combined.
- Divide the mixture into four equal portions and shape each portion into a patty about ¾ inch thick.
- Preheat your grill or skillet over medium-high heat and if using a skillet, add a tablespoon of oil.
- Cook the patties for 5-6 minutes until golden brown, then flip and cook for an additional 5-6 minutes until the internal temperature reaches 165°F (74°C).
- Whisk together the peanut butter, soy sauce, lime juice, honey, and sriracha in a medium bowl. Add warm water if needed for consistency.
- Assemble the burgers by spreading peanut sauce on the bottom of each bun or lettuce wrap, placing a patty on top, and adding additional sauce and toppings.
- Serve immediately with extra peanut sauce on the side.
