- Heat the skillet: Place a cast iron skillet over medium-high heat and add 1-2 tablespoons of olive oil or avocado oil. Allow the oil to heat up until it shimmers, about 2-3 minutes.
- Combine the ingredients: In a mixing bowl, combine dark ground turkey with sage, thyme, oregano, paprika, salt, black pepper, and optional cayenne and red pepper flakes. Mix thoroughly for about 2 minutes.
- Form the patties: Shape the mixture into 5-6 uniform patties, each about ½ inch thick.
