Step-by-Step Instructions
  1. Heat the skillet: Place a cast iron skillet over medium-high heat and add 1-2 tablespoons of olive oil or avocado oil. Allow the oil to heat up until it shimmers, about 2-3 minutes.
  2. Combine the ingredients: In a mixing bowl, combine dark ground turkey with sage, thyme, oregano, paprika, salt, black pepper, and optional cayenne and red pepper flakes. Mix thoroughly for about 2 minutes.
  3. Form the patties: Shape the mixture into 5-6 uniform patties, each about ½ inch thick.
  4. Place patties in skillet: Gently add the formed patties to the hot skillet, leaving 2 inches of space between each. Cook undisturbed for 3-4 minutes until golden brown.
  5. Flip the patties: Carefully flip each patty and continue cooking for another 3-4 minutes until both sides are golden brown.
  6. Serve warm: Transfer cooked patties to a serving platter and let them rest briefly before serving.
