- Chop zucchini, broccoli, and bell pepper into bite-sized pieces and sauté in olive oil with minced garlic for 5-7 minutes.
- In a mixing bowl, whisk together eggs, cottage cheese, salt, and pepper, then fold in half of the shredded cheddar cheese.
- Carefully fold the sautéed vegetables into the egg and cottage cheese mixture.
- Pour the mixture into the greased baking dish and smooth the top with a spatula.
- Sprinkle the remaining shredded cheddar cheese over the top and bake for 35-40 minutes until golden brown.
- Allow the dish to cool for about 10 minutes before serving, garnished with fresh thyme or parsley.
