  • 1 cup broccoli use cauliflower as an alternative
  • 1 medium bell pepper try carrots or your favorite veggie for variety
  • 1 cup shredded cheddar cheese swap for mozzarella or feta for different flavors
  • 2 tablespoons olive oil can use cooking spray or other oils
  • 2 cloves garlic use garlic powder as a substitute

Method
 

  1. Preheat your oven to 375°F (190°C) and grease a baking dish with olive oil.
  2. Chop zucchini, broccoli, and bell pepper into bite-sized pieces and sauté in olive oil with minced garlic for 5-7 minutes.
  3. In a mixing bowl, whisk together eggs, cottage cheese, salt, and pepper, then fold in half of the shredded cheddar cheese.
  4. Carefully fold the sautéed vegetables into the egg and cottage cheese mixture.
  5. Pour the mixture into the greased baking dish and smooth the top with a spatula.
  6. Sprinkle the remaining shredded cheddar cheese over the top and bake for 35-40 minutes until golden brown.
  7. Allow the dish to cool for about 10 minutes before serving, garnished with fresh thyme or parsley.
