For the Roll-Ups
  • 12 oz Lasagna Noodles gluten-free if desired
  • 1 cup Chopped Shrimp or scallops/lobster
  • 1 cup Crab Meat canned works well
  • 15 oz Ricotta Cheese cottage cheese optional
  • 2 cloves Minced Garlic or garlic powder
  • to taste Salt
  • to taste Pepper
  • 2 cups Alfredo Sauce homemade or store-bought
  • 1 cup Shredded Mozzarella Cheese combine with gouda for depth
  • 1/2 cup Grated Parmesan Cheese Pecorino Romano is a sharp alternative
  • 2 tbsp Fresh Parsley optional

Method
 

Preparation Steps
  1. Preheat oven to 375°F (190°C). Boil salted water, cook lasagna noodles until al dente, about 8-10 minutes. Drain and lay flat on a towel.
  2. In a bowl, mix chopped shrimp, crab meat, ricotta cheese, half of the Alfredo sauce, and minced garlic. Season with salt and pepper. Stir until smooth.
  3. Spread remaining Alfredo sauce in a baking dish. Place one noodle flat, scoop about 1/4 cup filling on it, and roll tightly. Place seam-side down in the dish. Repeat with all noodles.
  4. Pour remaining Alfredo sauce over all roll-ups, sprinkle shredded mozzarella and parmesan on top.
  5. Cover with foil and bake for 20 minutes. Remove foil and bake for another 10 minutes until cheese is golden brown.
  6. Let cool for a few minutes, garnish with parsley, and serve warm.
