  • 1/2 cup hot water to thin sauce
For Cooking
  • 2 tbsp vegetable oil for sautéing
  • 3 cloves garlic minced
  • 1 tbsp ginger minced
  • 1 tbsp Sichuan peppercorns for numbing spiciness
For Garnishing
  • 2 stalks green onions reserve some for topping
  • 1/4 cup peanuts or substitute with other nuts
  • 1 cup bok choy or spinach optional for color and nutrition

Method
 

Step-by-Step Instructions for Easy Szechuan Noodles
  1. Boil a pot of salted water and cook the noodles according to package instructions until al dente, about 4–6 minutes. Drain and toss with oil.
  2. In a mixing bowl, whisk together soy sauce, sesame paste, black vinegar, chili oil, hoisin sauce, sugar, and hot water until creamy.
  3. Heat a large skillet over medium heat, add vegetable oil, then ground meat. Sauté for 5–7 minutes until browned.
  4. Stir in minced garlic, ginger, and Sichuan peppercorns, cooking for 2 minutes. Add half of the green onions.
  5. Divide the noodles into bowls, top with the meat mixture and sauce, toss gently, and garnish with remaining green onions and peanuts.
  6. Optional: Blanch bok choy or spinach and add to bowls before serving.
