Marinate and Cook Chicken
- In a large mixing bowl, combine chicken thighs, soy sauce, honey, rice vinegar, sriracha, cornstarch, and sesame oil. Mix thoroughly and marinate for at least 30 minutes.
- Heat a large skillet over medium-high heat, add olive oil, and cook marinated chicken for 5 to 7 minutes until browned and cooked through.
Sauté Vegetables
- In the same skillet, add olive oil and sauté chopped onion, red and yellow bell peppers, garlic, and ginger for 5 to 7 minutes until tender-crisp.
Combine and Finish
- Return chicken to skillet, pour sauce over, and simmer for 3 to 5 minutes until sauce thickens.
Serve
- Serve hot over cooked rice and garnish with green onions and sesame seeds.
