Ingredients
  

For the Chicken Marinade
  • 1 pound boneless, skinless chicken thighs can substitute with chicken breasts or tofu
  • 1/4 cup soy sauce use low-sodium for a healthier option
  • 2 tablespoons honey maple syrup or agave nectar can be used as substitutes
  • 2 tablespoons rice vinegar apple cider vinegar can be used as a substitute
  • 2 tablespoons sriracha adjust based on spice preference
  • 1 tablespoon cornstarch arrowroot powder is an alternative
  • 1 tablespoon sesame oil optional, enhances flavor
For the Stir-Fry
  • 2 tablespoons olive oil can use vegetable or sesame oil
  • 1 medium onion yellow or white onion works well
  • 1 medium red bell pepper any color bell pepper can be used
  • 1 medium yellow bell pepper zucchini can be used as a substitute
  • 3 cloves garlic fresh is best
  • 1 tablespoon ginger fresh preferred, ground ginger can be a substitute
For Garnishing
  • 2 scallions green onions can substitute with chives or omit
  • 1 tablespoon sesame seeds crushed peanuts can be used as an alternative
For Serving
  • 2 cups cooked rice quinoa or noodles can be used

Equipment

Method
 

Marinate and Cook Chicken
  1. In a large mixing bowl, combine chicken thighs, soy sauce, honey, rice vinegar, sriracha, cornstarch, and sesame oil. Mix thoroughly and marinate for at least 30 minutes.
  2. Heat a large skillet over medium-high heat, add olive oil, and cook marinated chicken for 5 to 7 minutes until browned and cooked through.
Sauté Vegetables
  1. In the same skillet, add olive oil and sauté chopped onion, red and yellow bell peppers, garlic, and ginger for 5 to 7 minutes until tender-crisp.
Combine and Finish
  1. Return chicken to skillet, pour sauce over, and simmer for 3 to 5 minutes until sauce thickens.
Serve
  1. Serve hot over cooked rice and garnish with green onions and sesame seeds.
