- Preheat your grill or skillet over medium-high heat. Grill or sauté chicken breasts for about 6-7 minutes each side until cooked. Let cool and shred or dice.
- In a bowl, combine shredded chicken with 1/2 cup sweet chili sauce. Toss well to coat.
- Wash and prepare fresh vegetables. Chop lettuce, slice cucumber, and dice onion and carrots into bite-sized pieces.
- Spread mayonnaise or Greek yogurt on a tortilla. Layer lettuce, chicken, veggies, and cheese. Drizzle lime juice on top.
- Fold in sides of tortilla and roll tightly from the bottom upwards. Slice diagonally if desired.
- Serve fresh and warm. Pair with sweet chili dipping sauce if desired.
