Method
 

Cooking Steps
  1. Heat a large skillet over medium heat and add a splash of oil. Season chicken with salt, pepper, garlic powder, onion powder, and smoked paprika. Cook for about 5 minutes on each side until golden brown and cooked through.
  2. Mix your favorite BBQ sauce and honey in a small bowl. Pour over the chicken in the skillet and cook for 2-3 minutes until the sauce thickens.
  3. Add long-grain white rice and chicken broth to the skillet. Stir to combine and bring to a gentle simmer.
  4. Cover the skillet with a lid and reduce heat to low. Cook for about 20 minutes until rice is tender and has absorbed most of the liquid.
  5. In the last 5 minutes of cooking, remove the lid and place mixed vegetables on top without stirring. Cover and let steam.
  6. Remove from heat, let sit for 5 minutes, then fluff the rice with a fork, mixing in the chicken and vegetables. Serve garnished with green onions or parsley.
