  • 1 tablespoon fresh ginger grated
  • 2 tablespoons vegetable oil olive oil works too
  • 1 tablespoon honey or agave syrup
  • to taste black pepper freshly ground
  • to taste chili powder fresh chilies can be used
For Garnishing
  • to taste fresh herbs (cilantro) basil as an alternative
  • 2 pieces lime wedges or lemon wedges

Method
 

Step-by-Step Instructions
  1. In a mixing bowl, combine fish sauce, soy sauce, brown sugar, minced garlic, and grated ginger.
  2. Pour in vegetable oil and honey, then add black pepper and chili powder to taste.
  3. Mix until the sugar is dissolved and the ingredients are well-blended.
  4. Add the chicken thighs to the marinade and coat well. Cover and refrigerate for at least 1 hour, preferably overnight.
  5. Preheat your grill to medium-high heat (around 400°F/200°C).
  6. Remove chicken from the marinade and shake off excess. Grill for 5-7 minutes per side until cooked to an internal temperature of 165°F (75°C).
  7. Let the chicken rest for 5 minutes before serving.
  8. Garnish with fresh cilantro and lime wedges; serve with jasmine rice or salad.
