Method
 

Step-By-Step Instructions
  1. Rinse the rice under cold water in a fine mesh strainer until the water runs clear. Allow to drain.
  2. In a medium saucepan, bring 2 cups of broth to a simmer over medium heat for about 5 minutes.
  3. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes.
  4. Add the rinsed rice to the skillet and toast for 2-3 minutes, stirring to coat with oil.
  5. Stir in the simmering broth, lemon juice, zest, oregano, salt, and pepper. Mix well.
  6. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes until rice absorbs liquid.
  7. Remove from heat and let sit covered for 5 minutes. Fluff with a fork.
  8. Transfer to a serving bowl and garnish with parsley before serving.
